Plancha Burger and Smash Burger Recipe: melted cheddar, caramelized onions and crispy potatoes

Ingredients

For the burgers

  • 4 minced beef steaks (150 g each)
  • 4 brioche burger buns
  • 4 slices of cheddar
  • 2 large onions
  • 1 tbsp sugar or honey
  • A dash of olive oil
  • A knob of butter
  • Salt, pepper
  • Sauce of your choice (BBQ, smoked mayo, burger sauce…)


For the potatoes

  • 800 g potatoes
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp herbs de Provence
  • Salt, pepper

1. Prepare the potatoes (start with this)
Preheat the oven to 200°C.
Cut the potatoes into wedges.
Toss them in a bowl with olive oil, paprika, herbs, salt and pepper.
Spread on a baking tray and bake for 35–40 min, stirring halfway through.

2. Make the caramelized onions
Finely slice the onions.
Heat a pan or the plancha over medium heat with oil and butter.
Add onions, lightly salt.
Cook 10 min, then add sugar or honey.
Simmer 15 minutes until soft and slightly caramelized.

3. Toast the buns
Place open buns on the plancha.
Toast 1–2 minutes until golden and crisp.

Cooking

Cook the steaks on the plancha

  • Preheat to 200–230°C.
  • Season steaks with salt and pepper.
  • Cook 2–3 minutes per side.
  • Add a slice of cheddar halfway through so it melts.

Assemble the burgers

  • Spread sauce on the bun.
  • Add the cheddar steak.
  • Add a generous spoon of caramelized onions.
  • Close the burger and serve with crispy potatoes.

Tip

For even more flavor, brush steaks with olive oil + smoked paprika before searing: it enhances the grilled plancha flavor.

For smash burgers, use a wide, rigid spatula and press the meat ball (ideally 20% fat) right after placing it on the hot plate until you reach the desired thickness.
